| Japan has a long tradition of blade-making. Traditional samurai swords,
and more recently the highest quality stamped kitchen knives come out of
Seki City in Gifu prefecture, but most of the finest hand-forged kasumi
knives come out of Sakai City, Osaka. The shapes of the knives are pretty standardized, but the quality of the blade depends on material used and skill of the bladesmith. As handles and horn caps are natural products, there can be quite large variations in color. |
